Teochew Mooncake/Thousand Layer Yam Pastry






Teochew Mooncake/Thousand Layer Yam Pastry

- makes 26 small pastry


Ingredients for Dough (A) :

200g all purpose flour  
15g icing sugar
70g ghee                      
105g cold water


- rub ghee with icing sugar, add in flour, roughly mixed
- add in cold water and mix till form a soft dough.
- divide into 6 portion, covered and leave aside.

Ingredient for Dough (B) :
160g low gluten flour
80g ghee
purple colouring

- mix ingredients together to form a soft dough.
- add in colouring as desired.
- divide into 6 portion, covered and chilled

Yam Paste :

Ingredient
500g yam
80g sugar
30g unsalted butter
20g full cream milk powder

- steam yam until cooked
- mixed in all ingredients and let it cool

Method :
- wrap ingredient (B) into (A) and seal well.
- roll flat the dough into oval shape.
- then roll up like Swiss roll, cover with a sheet of foil.
- leave aside for 30mins.
- roll flat again and brush on a little water.
- again, roll up like Swiss roll.
- cut into 4 portion, surface reveals the spiral layer.
- roll out the dough into round shape.
- place in the filling, gather the outer edges of the dough circle and wrap up the filling.
- place them onto a baking tray, bake for 25min at 170c.
- leave cool on the wire rack.
